Intro

Thai Peanut Soup and Tonkotsu Ramen are two of my favorite dishes, and this recipe not only combines both those things but it's also a lot healthier than the rich fatty pork broth found in Tonkotsu. This soup recipe is better than anything I have found in a restaurant, it's super rich and bursting with flavor!

Thanks to the Instant Pot this recipe couldn't be quicker or easier!

The only prep is chopping vegetables, no marinating, precooking, or dirty pots.

Ingredients

4 cups chicken broth (low sodium)
13-14 ounce can of coconut milk
1/4 cup soy sauce (low sodium)
2 tablespoons fish sauce
2 tablespoons honey
1/3 cup crunchy peanut butter (or creamy if you don't want a crunch)
1/4 cup Thai red curry paste
3/4 pound boneless, skinless chicken breasts
8 ounces baby bella mushrooms, sliced
1-2 red bell peppers, chopped
1-2 inch fresh ginger, grated
1 clove garlic, minced or grated
2-4 servings of ramen noodles
1 lime
3 cups baby spinach
1/3 cup fresh basil, roughly chopped, plus more for serving
2-3 Bird's Eye / Thai / Red Chilis, diced (This is optional, but the spiciness helps balance the richness)

Prep Time: 15 Mins (Less if you have something like a chopper)

Cook Time: 20-30 mins (Preheat Time + 10 Min Cook Time + Quick Release time)

Flu shots may be more important than seat-belts, considering that the flu kills more than auto accidents!

Flu shots might not seem all that important, especially if you think you, or someone you know "had the flu" in the past few years, when in fact they only had a cold and NOT the flu. Many colds in winter are called "flu", which hospitalized 900,000 in 2017-18 season, and killed over 80,000.

If you aren't getting vaccinated, here's why you should go to the doctor immediately if you think you've got the flu!

Yup… that's a lot worse than getting a cold. This year, they can test for flu within 30 minutes, and IF you come within the first 24-48 hours, there are new drugs which can greatly reduce the symptoms. This can save you weeks of misery and a lot of money.

DON'T get that flu shot -- at least not yet!

Every year starting as early as August, doctors will start "bugging you" :) about getting a flu shot, NOW. However, that is clearly NOT the best advice. Why?? Vaccinations wear off after about 4-5 months. So, if you start in August, by the time the prime season hits in January, you will not be nearly as protected as you could. The following chart shows when the flu is at its worst:

Don't Buy Shower Heads Before Reading This...

My Story

I JUST wanted to replace my aging shower head, which was now pre-set into permanent "Spew Mode", soaking my towel while waiting for the hot water to reach me. Apparently the sediment had cemented many of the parts into this new "bathroom irrigation mode" and prevented repair.

I'd seen a replacement candidate for the $39 COSTCO WaterPik, on sale for $29, and then found 129 reviews at COSTCO.com, Item #1900507.

WaterPik.com had a huge number of models, but none with the most important feature they call, "Water Saving Flow Control", included on the COSTCO model. After looking for (and NOT finding) any similar model, or adjustable flow controlled heads, I did find an additional $10-off coupon at WaterPik.com.
